In these wood-fired brick ovens the floor is tiled with heat-storing clay bricks on which the dough is directly placed. Only in a real stone oven the dough draws the heat directly from the hot brick. The porous fireclay brick also absorbs any excess moisture from the dough, enabling the crust to turn crispy. When using our BREAD BAKING STONE, which is also made of fireclay, you only need to place the stone ( both sides can be used ) onto the grate of your electric- or gas-oven. -----BR>After preheating the oven at its highest setting for about 40 - 45 minutes, the BREAD BAKING STONE will have reached the perfect temperature and you can proceed to bake your bread.
